for information and reservations.
Last night I had dinner with a couple of friends from Toronto, both of whom eat at gourmet restaurants at least a few times per week, so guaging their reaction was something I was looking forward to. We dined at Bianco, and I have to say that the three of us were immensely impressed.

We were seated on the deck overlooking the Rio Cuale, a nice breeze was blowing and the temperature and climate were perfect. The atmosphere at Bianco is beautiful inside and out. Even the bathrooms are elegant. The wait staff was very attentive as well, to the point, in fact that I was thinking they could read minds, I guess perhaps it's just that they're quite well selected and trained for this upscale environment.

As promised, the cuisine is the best of both worlds. We started with top-shelf drinks and moved on to the appetizers. Each of us selected something different from the menu, and there was a fair amount to choose from, something for everyone's palette. I had the Tuna Tartar, and it was absolutely the best piece of tuna I have eaten in five years of living in Vallarta, fresh and tender. I went on to have Sea Bass on a bed of rice which was also phenomonal, we all finished up with a rich and perfectly done creme brule - hand-made on demand by Bianco's new pastry chef. The owner visited our table a few times and offered us a nice tequila liqueur to finish off the meal, a perfect end to a perfect meal.

Let me let you in on a little secret - I don't eat at gourmet restaurants as much as my friends from Toronto do. When I worked in Denver I found that gourmet restaurants there left one wondering what to eat after dinner - portions at gourmet restaurants in the US and Canada can often be rather small. This is not the case with Bianco. Not only was the food amazing, We were all completely satisfied after the meal. Both myself and my friends felt that Bianco is truly world class dining experience.

It's a true credit to the owners and chefs that their combination of atmosphere, service and culinary excellence leaves nothing to be desired. I look forward to my next dinner at Bianco and the great experience it promises to be.
