It is a feast fit for a foodie. The annual Festival Gourmet features chefs from all over the world and one guest chef is stirring things up at Kaiser Maximilian.

"I have always been interested in cooking and food, plus great meals have always been a big part of my life," says Jeremy Kittelson, Guest Chef at Kaiser Maximilian during Festival Gourmet 2009. "My two grandmothers, who were fantastic cooks, always prepared everything from scratch whether making Thanksgiving dinner or baking bread, they only used the basics and nothing from a can or box."

This sophisticated chef with a down home palate shares his ideas for gourmet menus combined with flavors and experiences from his roots in Iowa. Taste his recipes at Kaiser Maximilian during the Festival Gourmet.

"I was very excited to be invited to visit to Puerto Vallarta and work in this beautiful place, to have the opportunity to cook and be part of such a great gastronomical experience, and to see what the participating chefs from all over the world had to offer and working at this great restaurant, Kaiser Maximilian and their chefs has been an amazing experience. It is great to see what goes on in other countries and to be able to cook using local food and ingredients," says Jeremy.

He explored various styles of cooking and started to develop his kitchen experience during his early working years and expanded as he continued his education.

"I went to culinary school to pursue something I really like to do. I started cooking as a second job during high school and in college and really liked it and I found out it was something I was pretty good at and other people thought I was good, so I went to culinary school in Phoenix and graduated in 2000 and from there I just went on a path to try to work in every great place I could," says Jeremy.

Just add Kaiser Maximilian to his list of accomplishments. Jeremy's twist on scallop ceviche, skate wing, sea bass and rack of lamb can be found on the special menu. Working as a guest chef is fun and an experience to last a lifetime.

"I hope to take back a lot of the straight forward approaches that I've seen down here," says Jeremy, "We need to respect what we have in the United States and at the same time we're very privileged in our kitchens to have a lot of great equipment and to see how they can produce such an amazing product here with the bare essentials, it's inspiring to see, and it kinda got me back in touch with cooking and the differences between America and Mexico. It's truly been a rewarding experience."

Jeremy has contributed and collaborated on many recipes at the restaurant, be sure to stop by for a taste. The Festival Gourmet runs through November 22nd.

Jeremy is currently the executive chef at Avondale Restaurant at the Westin Riverfront Resort and Spa in Beaver Creek, Colorado.
