November 11, 2009

In this episode of Street Eats, we visit Tacos de Montes de Oca, on the corner of Bolivia and Guatemala in El Centro.
The taco stand, Mexico's version of fast food. Most usually specialize in one type of filling, but it's the preparation and sauces that set one place apart from another.

For over 35 years at Tacos Montes de Oca they have been slicing and dicing beef, pork and tripe for tacos and quesadillas. The owner enjoys chatting up the customers, and many are regulars.

According to taco stand owner Jorge Flores Montes de Oca, "The beef is called asada and the pork is called adobada. The pork gathers flavors while it marinades for 15 to 20 minutes in chile, chile guajillo, pimienta, salt, vinegar, garlic and marjoram.

Everything is sautéed on a domed griddle, including onions, jalapeños and the tortillas, which get a little extra flavor when the fat is spooned over them. Jorge takes the lid off sensational sauces and toppings, including salsa mexicana, guacamole, tomatillo, y jalapeño.

He has ten tasty offerings including radish slices instead of pickles. You can make each taco taste completely different.

Order one with everything, which includes beans, chopped cabbage, a tomato sauce and a mild chile sauce. And there's also fresh lime. They may look small but by the time you add all the extras there's a meal for sit down or to go.

Everything is homemade and fresh everyday. Jorge can serve up to 150 per day. On the corner of Bolivia and Guatemala, you can roll up the flavors everyday except Tuesdays from 10 am until 9 pm.
