Kaiser Maximilian’s distinction as one of Puerto Vallarta's premier restaurants will be showcased during this year's International Festival Gourmet, as Chefs Carlos Palomera and Claudio Hernández collaborate with guest Chef Nicole Pederson of Chicago's C-House to present New American Cuisine.

Chef Carlos Palomera has been part of the success formula at Kaiser Maximilian since it opened in 1995. In his 16 years of Vallarta Festival Gourmet International participation, he has worked shoulder to shoulder with, and been inspired by, many acclaimed U.S. and European chefs. Sharing Maximilian’s bistro kitchen is Pastry Chef Claudio Hernandez, who turns out the pastries and desserts that are essential to the restaurant's Austrian Bistro experience.
Guest Chef Nicole Pederson leads the culinary team at C-House Fish and Chops, acclaimed Chef/Owner Marcus Samuelsson's restaurant located at the Affinia Chicago hotel. At C-House, Chef Nicole takes a simple and seasonal approach to her menu, working closely under esteemed mentor Chef Marcus Samuelsson.
According to Samuelsson, Pederson is, "akin to a young Alice Waters with a passion for pure, simple food and a true understanding of the beauty in flavor combinations." Recently, Chef Nicole was privileged to assist Chef Samuelsson during his Guest Chef appearance for the Obama Administration's first State Dinner at the White House, preparing a meal for the first family, Prime Minister Singh of India and 400 of their guests.
Today, Chef Nicole continues to garner acclaim as a top upcoming chef, including being nominated for Best New Chef in TimeOut Chicago's 2010 Eat Out Awards and being named as one of Chicago's Best New Chefs in CS Magazine's January 2010 Best Of issue.

Though this year's Festival Gourmet will take place from November 11-21st, Kaiser Maximilian will be serving their special Gourmet Festival Menu from November 12th through December 18, 2010.
