Daiquiri Dick's Summer Sizzle: Savory Spain

Puerto Vallarta, Mexico - Savor the flavors of the world, without leaving Puerto Vallarta! Daiquiri Dick's Summer Sizzle continues this week with a special 3-course menu featuring spectacular selections from Spain, for just $299 pesos, through July 2nd.

Spanish cuisine represents a wide variety of dishes that stem from differences in geography, culture and climate. With its proximity to the ocean, it is heavily influenced by seafood. The Spanish terrain offers up an abundance of fresh products. The famous hams are cured high in the mountains, vineyards and olive groves sprawl over the landscape, and fresh fruits and vegetable come from all parts of the country.

Endless cultures, as they passed through or settled in Spain, have influenced the history of Spanish cuisine. The Phoenicians left their sauces; the Greeks introduced the wonders of olive oil; and the Romans, Carthaginians, and Jews integrated elements of their own cooking into Spanish cuisine.

The Moors, during their centuries of reign, had the most influence on Spanish cuisine. They introduced fruits, light seasonings and nuts used with meats and fish, along with the staple, rice. They brought in saffron, cinnamon, and nutmeg. The foods we consider to be "typically Spanish" would either not exist or would be extremely different without the intervention of so many cultures into the history of Spanish food.

• Deep Fried Almond Crusted Shrimp served with Wasabi Aioli

• Pickled White Fish Pinxto served on Baguette with grilled Bell Peppers and Chipotle Aioli

• Grilled Chicken Brochette with Dates and Pears

• Fillet of Salmon marinated in Orange, served over grilled Asparagus with Romesco

• Traditional Seafood Paella with Shrimp, Clams, Scallops, Calamari and Crab

• Spanish Fritters with Chocolate Sauce
• "Magdalenas" - Orange Infused Spanish Tea Cakes with Creme Anglaise

Along with historical impact, the discovery of the Americas by Christopher Columbus' famous 1492 voyage resulted in the addition of more important elements to the history of Spanish cuisine. As of 1520, foods from the new lands arrived in Spain and immediately began to integrate themselves into the Spanish diet. Some of the products include tomatoes, vanilla, chocolate, various beans, and potatoes, (which surprisingly arrived in Spain before arriving in Ireland,) are all staples of today's Spanish kitchen. Many of these came from Mexico.

The Summer Sizzle menu changes every Wednesday until August 31, 2012. Delicious destinations still to come on this journey include exotic Istanbul and Pan-Asian medleys. There will be select countries in Western Europe, where comfort food has gone creative, and the lively seasonings of Latin America will produce mouth-watering results.
