In this episode, Laura Gelezunas and the Kitchenettes show us how to make Tangy Sweet Salsa and Avocado Margaritas at Paramount Bay Condo 708 in Colonia Amapas, just five minutes south of downtown Puerto Vallarta, Mexico.

Living in the tropical climate of Puerto Vallarta offers many perks, and one of the them is being able to buy locally grown, fresh fruits and vegetables year round. All of these fresh ingredients serve as inspiration for Laura, who does not use exact measurements. Since everyone's palate is different, she cooks 'to taste,' and you may want to do the same when preparing the recipes below.

Recipe: Tangy Sweet Salsa

2 cups finely diced fresh pineapple
2 cups finely diced tomato
1/2 cup to 3/4 cup finely chopped onion
2 finely chopped serrano chiles (discard seeds and membrane)
1/2 cup chopped cilantro
1 tablespoon cumin
2 to 3 cloves minced garlic
1.5 teaspoons sea salt
1.5 tablespoons fresh grated ginger
1 cup fresh squeezed lime juice

Mix all ingredients in a bowl and place in the fridge for at least two hours so the flavors meld. Serve with chips or tostadas or spoon over your favorite protein.

Recipe: Avocado Margaritas

2 cups of ice
1 avocado
1/4 cup chopped cilantro
4 shots of tequila (your choice)
2 shots simple syrup or Jarabe
2 shots triple sec or Controy
1/2 cup fresh squeezed lime juice

Put all this into a blender and mix well. Serve in glasses rimmed with Tajin.

All Paramount Bay condos include indoor, assigned parking spaces. Enjoy full access to the public areas including a fantastic 200 foot infinity pool overlooking the Bay of Banderas and the city. You can work out in the fully equipped gym. This complex is pet friendly and has a dog run park. There is 24 hour security for your piece of mind.
