Recipes and Real Estate: Cool & Spicy at Renaissance

In this edition of Recipes & Real Estate, Laura Gelezunas and the 'Kitchenettes' show us how to make salsa and Margaritas from the kitchen at Renaissance Townhouse One in Vallarta's Colonia Amapas.

In this episode, Laura Gelezunas and the Kitchenettes show us how to make Cool & Creamy Salsa and Spicy Pineapple Margaritas from the kitchen at Renaissance Townhouse One in Colonia Amapas, just 5 minutes south of downtown Puerto Vallarta.

Living in the tropical climate of Puerto Vallarta offers many perks, and one of the them is being able to buy locally grown, fresh fruits and vegetables year round. All of these fresh ingredients serve as inspiration for Laura, who does not use exact measurements. Since everyone's palate is different, she cooks 'to taste,' and you may want to do the same when preparing the recipes below.

Recipe: Cool & Creamy Salsa

2 cups finely diced cucumber
2 cups finely diced red bell pepper
1/2 cup to 3/4 cup finely chopped red onion
2 finely chopped jalapeņo peppers, remove the seeds and membrane to make it less spicy
1/2 to 3/4 cup sour cream
1/4 cup rice wine vinegar
1/4 cup fresh squeezed lime juice
1 to 2 tablespoons dry ranch dressing mix
1 tablespoon cumin
1 teaspoon black pepper
Sea salt to taste

Mix all ingredients in a bowl and place in the fridge for at least two hours so the flavors meld. Serve with chips or tostadas, eat as a salad or spoon over your favorite protein.

Recipe: Spicy Pineapple Margaritas

2 cups of ice
2 cups pineapple juice
1/2 to 3/4 cup fresh squeezed lime juice
4 shots tequila (your choice)
2 shots simple syrup or Jarabe
2 shots triple sec or Controy
1/2 to 1 teaspoon chipotle powder or more if you want is to have some kick

Put all this into a blender and mix well. Serve in sea salt rimmed glasses.

Real Estate: Renaissance Townhouse One


The Renaissance complex has nine condominiums and three town houses, the latter of which are situated on the lower side of the building with easy access from Callejon de la Igualdad.
