Puerto Vallarta, Mexico - Two ocean coastlines and many travelers helped form the basis for Columbian cuisine and its food is typical of Latin American cuisine as a whole. There is a heavy focus on deep-frying everything. Meats (beef, pork, chicken, fish) are popular and most dishes are served with rice, beans, or potatoes. Vegetables play a small role, while the variety of fresh tropical fruits available is amazing.

Colombia's varied cuisine is influenced by its diverse fauna and flora as well as the cultural traditions of various ethnic groups. There is the Caribbean and Pacific coasts, mountains, jungle, and ranch lands. These combined with Indigenous people, Spanish, African, Arab and some Asian influences give the food flare.

You can sample a wonderful array of Columbian foods during the Weekly Special Menu at Daiquiri Dick's Restaurant January 25 to 31. Executive Chef Ignacio Uribe, Chef de Cuisine Hugo Mejia and Sous Chef Rogelio Garcia have chosen some spectacular recipes, and dinner is served from 5-11 pm.
