Every week visit a different country or region and December 28-30, 2015 and January 1-3, 2016, the US West Coast is the chosen culinary destination. There is a special menu for New Year's Eve.

Executive Chef Ignacio Uribe, Chef de Cuisine Hugo Mejia and Sous Chef Rogelio Garcia have come up with some great dishes. This is an a la carte menu and dinner is served from 5 to 11 pm. • Seared Scallops with Sweet Corn-Basil Purée with Cherry Tomato and Watercress Salad
• Sea Bass Chowder with Corn, Tomato and Cheddar Cheese
• Spinach Salad with Hazelnuts, Blue Cheese and a Balsamic Vinaigrette

• Grilled Escolar (Butterfish) with Warm Champagne Vinaigrette and Capers served over a bed of apple braised red cabbage with bacon

• Catalán Style Paella with, Shrimp, Calamari, Crab, Scallops, Chicken and House made Chorizo

• Porchetta Natalizia (stuffed and rolled pork) stuffed with Pine Nuts, Raisins, Bread, Mortadella and fresh sage and rosemary
