2012 Children of the Refugio Cookbook

Puerto Vallarta, Mexico - Calling All Cooks! Chef Seth Cloutman, long-time supporter/fundraiser for the Refugio Infantil Santa Esperanza (RISE) and the Vallarta Botanical Gardens, has come up with a another great idea. He intends, in the next few months, to put together a cookbook featuring recipes from local chefs and restaurants to benefit the charities.

The Refugio Infantil Santa Esperanza (RISE) and the Vallarta Botanical Gardens are pleased to announce the 2012 Children of the Refugio Cookbook to be published in December 2011. Chef Seth Cloutman will edit the cookbook, which will be a collection of recipes from restaurants as well as community members.

All profits from cookbook sales will be split between RISE and the Vallarta Botanical Gardens. The cookbooks will be sold at participating restaurants and other businesses throughout the year.

Portraits of the Children of RISE, taken at the Botanical Gardens, will be interspersed with recipes and photos of the dishes. Vallarta photographer, Paul van Vleck, has donated the children's portraits, and Rebecca Texier, a New York City based photographer, has donated the food shots. Henry Baker, a Washington D.C. based graphic designer, has donated the design and layout of the 60 page, full color glossy collection.

A number of restaurants have already signed on including Trio, Vitea, No Way José!, Café des Artistes, The River Café, and Trattoria Michel, and certainly many more will participate. Each of the restaurants featured will also be participating in the February 11, 2012 RISE for Hope annual fundraiser.

Members of the community who wish to have their own recipe included in the collection are invited to make a $100 tax deductible contribution, and to submit two recipes by October 25, 2011. Each recipe will be tested by Chef Cloutman and the chosen dishes will be photographed and included in the cookbook.

Please submit your two recipes by October 25th, 2011 to Seth at seth(at)foodbyseth.com and send your $100 US/CDN donation to either the US foundation at childrens-shelter-of-hope-foundation.org, or the Canadian Children's Shelter of Hope Foundation at ccshf.ca with a notation of "Cookbook."
